Maple Glazed Grilled Carrots

Cooked carrots the old fashioned way aka boiled or steamed, typically gross me out. However, I started making these Maple Glazed Grilled Carrots and the crunchy charred texture on the outside with the sweet and soft inside has converted me into a cooked carrot fan! These are also so easy as you just throw them on the grill. Check out all the details below!


Prep:

-You can let these marinate all day or even overnight to make dinnertime even easier!


Tips:

-You can increase or decrease the spice level by increasing or decreasing the cayenne in this recipe (the chili powder isn't hot) and same goes for the hot honey. If you don't like heat, just top with regular honey!

-Save some of the marinade so you can brush that on as the carrots are grilling for extra flavor and caramelization


Leftovers:

-These would be great on a sandwich, in a pasta salad, in a regular salad, or if you want to reheat, I would reheat in the oven or air fryer at 375 until hot and crisp



 

The recipe:

Maple Glazed Grilled Carrots


Prep time: 5 minutes

Cook time: 20 minutes


Serves: 4



For the carrots

1 bunch of carrots, cut in half

1 tablespoon olive oil

1 tablespoon maple syrup

1 teaspoon garlic salt

1/2 teaspoon cayenne pepper (less if you want to reduce the spice)

1/2 teaspoon chili powder

1 teaspoon hot honey for topping

Instructions:

  1. Wash your carrots, and cut them in half lengthwise. You can peel them or leave them as is- they are great either way

  2. Mix all the rest of the ingredients together in a bowl (minus the hot honey although you could include half of that just save some for topping)

  3. Add your carrots to the bowl and toss to combine

  4. Preheat your grill to 400 degrees and cook the carrots for 5-10 minutes per side or until nicely charred. The cook time will depend on how big your carrots are

  5. Remove from grill and drizzle the hot honey over top

  6. Serve and enjoy!
